Turkey Leftovers For Anytime Of The Year!
Good Old Low Fat, Low Sodium And A Year Round Staple...The Common Turkey. Bake It, Fry It Or Grill It I'm Betting You'll Have Left Overs!
Have you ever smoked a Turkey on the grill? I have many times. I start with a clean rinsed Turkey approx 14 lbs. I place a cut apple and onion inside the body cavity then place the Turkey into an oval tin baking pan made for Turkeys; breast side up to start. I then place the pan onto my MEDIUM HOT grill, close the lid and let it smoke away for approximately 30 minutes. I then open my grill and turn the Turkey onto it breast, back side up and continue to do this rotation every 30 to 45 minutes for about 3 1/2 hrs until the turkey is ready to fall off of the bone. Add liquid as need, water or turkey stock. Your Turkey will be a beautiful brown just like from the oven and have that great smoke flavor. Once your bird is done place it on a serving pan or plate and enjoy!
Next: What to do with the left over Turkey? This is the point to this lens. I'm going to suggest some of what I consider good meals from the left over Turkey meat. Things like Smoked Turkey Vegetable Soup, Turkey Sandwiches, Turkey Shepards pie, BBQ Pizza with Turkey instead of Chicken and a few more yummy choices.

Ingredients
- Turkey bones roasted in over until brown (approx 20 min. @ 400 degrees)
- left over meat from Turkey
- amount depends on how much you make
- 1 med onion
- chopped
- 3 stalks of celery
- sliced
- 2 or 3 large potatoes
- cut into 1/2 inch cubes
- 1 large bag of mixed vegetables
- 1/2 cup of barley
- 1 cup of rice or package of noodles (optional)
- salt
- pepper
- garlic
- thyme
- rosemary or any other spice you prefer to taste
Instructions
- Brown Turkey bones in oven for approx 20 minutes, while bones roast sautee onion & celery in pan with a little butter until they start to brown. Once bones are roasted place roasted in large pot, cover with water and simmer about 45 minutes. Remove bones, take any meat off and add sauteed vegetables, barley, potatoes with seasonings and simmer until soft. Add frozen mixed vegetables, rice or noodles, cook until tender and serve with some crusty bread or salad or both!
Smoked Turkey Shepard Pie - Or No Smoke That Depends On How You Baked Your Bird
Make this pie from your left over holiday fare.
Instructions
- cut up left over Turkey into 1" pieces, mix together with left over gravy and a bag of mixed vegetable or even vegetables left from your Thanksgiving dinner. Salt & pepper to taste, then cover your Turkey mixture with an inch or so of mashed potatoes or even a layer of biscuits.
- You can make it easy by using pop open canned biscuits or try the ready made frozen ones. If you are good at biscuit making save money and make your own!
- Bake until top is light brown and gravy is bubbly approx 25 - 30 minutes.

I love my counter top convection oven. It bakes everything I want to bake in it quicker and in my opinion with less expense of heating the bigger oven. So as a tried and true user of a counter top convection oven I recommend one. I personally like one that will bake a 12 lb Turkey or a pizza and mine was not very expensive but did everything I wanted it to. I've about worn it out and will be replacing it quite soon.
Turkey Sandwich Salad Spread
- approx 3 cups chopped left over Turkey meat
- Ranch dressing
- mayonaise
Instructions
- Chop left over Turkey into 1" chunks, add enough mayonaise to just coat Turkey, toss gently. Then add enough ranch dressing to make a moist chunky spead.
- How about adding you favorite chopped dried fruit like apricots, mango, cranberry and some walnuts to your chopped Turkey. Add a teaspoon or two of honey to your mayonaise if a little more sweetness is desired. Now you have a Turkey fruit and nut & honey spread. Place mixture on split croisants for a top notch lunch to even entertain with.
- Serve on rolls to your liking, add cheese and/or veggies. You have a cold sub or sandwich quick and easy.

- Turkey

- Lettuce

- sliced bell pepper
- pickles ( all optional)
- mayonaise
- any tasty mustard
- horseradish
- Nice soft sub roll or bread to your liking
Instructions
- Have your sandwich cold or hot on a soft bun or toasted right with the meat and cheese in it. Add your condiments, top with your veggies or place on bottom. It's all up to you.
- Add cooked bacon and make a Turkey, Bacon & Swiss toasted or Cold. Add Ham and make a Club Sub.
- Your taste is the limit to what you can build.
Turkey Pizza
- Top a white or whole wheat pizza crust that has been spread with BBQ sauce with chopped Turkey and any other toppings you like. Cover with grated Mozzarella cheese or another cheese you may like, bake approx 15 minutes @ 450 degrees depending on the size of your pizza, or until the cheese is melted and crust is baked a light brown.
Quick & Easy One Skillet Turkey Stir Fry Idea
- Add 2 cups of chopped leftover turkey to a sauteed onion, some mushrooms, broccoli and/or cauliflower, sautee approximately 2 minutes to heat meat, add 1 cup of Turkey broth and then add instant rice. Simmer until instant rice is cooked, approx. 8- 10 minutes.
Turkey Pot Pie ... Easy Economical Satisfing
- Add leftover chopped turkey, leftover green peas or green beans and carrots, any veggie you like or all of them along with a can of condensed cream of chicken or mushroom soup all combined together, Place into a pie crust that has been placed into a 9" in pie pan. If you have left over gravy you can use that instead of soup. Add any seasonings you like to the mix.
- Top with second pie pastry, cut slits in top to let out steam and bake 375 for approx. 45 minutes. Your home made Turkey pot pie will be tasty and satisfying. I call this comfort food.
