Peanut Brittle Microwave Made Has Never Been Easier
I came across this recipe for Microwave Peanut Brittle back in 1974 when I got my first Microwave Oven which included a small recipe book. It has been the only kind of Peanut Brittle I have made ever since. It's crunchy, tasty and easy. I have considered this Peanut Brittle very teeth friendly! No one has broken a tooth on it yet!
I've made many jars full of this Brittle to give as a great homemade Christmas present. My family loved it, even the in-laws loved it. Friends and family have brought the empty jars back and asked for more.
Some Important Tips:
Be aware that it comes out of the Microwave boiling and very hot. Once the baking soda is stirred in it foams and rises so use a big bowl. After you have everything incorporated, using pot holders, quickly pour the brittle onto your prepared pan and let it spread out naturally. Don't touch it or try to spread it out just let it do that itself and cool because spreading it makes it flat and you want the baking soda to do it's job and put the air bubbles all threw you Brittle. The raw peanuts will be nicely toasted. Your undisturbed Candy will be crunchy and have a beautiful sheen to it as well.
Let your bowl cool before adding any water to it. Even though the candy that has been left in it after you've spooned out as much as you can hardens it will melt away once the bowl is filled with water and let to set for a while. It's easy clean up!

Ingredients
- "1 cup plus 1 TBLS Light Corn Syrup"
- "2 cups white sugar"
- "2/3 cup raw peanuts"
- "2 TBLSP. butter"
- "2 tsp. vanilla"
- "2 tsp. baking soda"
Instructions
- 3 quart Microwave safe casserole dish. I used a Pyrex bowl for this batch.
- combine syrup, sugar & peanuts, mix well.
- Microwave on high 12 minutes.
- Stir in butter and vanilla, cook 4 more minutes on high.
- Remove from microwave and stir in Baking Soda. It will foam so incorporate gently but completely. Do not beat.
- Pour out on buttered cookie sheet, buttered pizza pan or a marble slab. The shape does not matter as the Brittle will spread out and be broken up.
- Cool completely about 1 hr, then break into the size chunks you desire.
- I have made decorative jars for the Holidays and filled them as gifts. Add a bow and gift tag and what the smiles you get from your gift!
- * Please note: The candy is very hot and boiling when it comes out of the Microwave, use pot holders! Be very careful not to spill it on you as it will stick and burn. I do not recommend children make this Candy unsupervised. It is a quick, easy and fun recipe for children to watch you make and to participate in at the end because they love breaking the brittle into pieces once it's cool and helping to place it in the jars or candy gift bags.
