Delightful Pecan Sandies For Your Gift Boxes
For many years I've made home baked cookies for gift giving, many kinds over a week, if I can keep my husband out of them, all placed decoratively in a box carefully lined with tissue paper for just that hint of quality effect.
Pecan Sandies are one of the cookies I choose to add to my gift boxes. Among the beautiful brownies, decorated cut out Christmas cookies and other bars or dropped treats. I liked the look of these cookies scattered throughout my box with their pure white powdered sugar coating. They are like the Holidays.
Pecan Sandies hold up quite well as a gift and boxed or bagged if you wish. They look beautiful, like little snow balls, among the colorful cut outs and decadent brownies. I know every time I've given a box of cookies as a gift a huge smile appears and the word ahhh excapes my gifted persons mouth.
I made this batch just for this lens so you might try them for your holiday gift giving or along with your desert table or cookie bar.
These wonderful but delicious cookies and will melt in your mouth. I bet you can't eat just one!
Light, Buttery and Not To Sweet
These Cookies Are Almost Like A Shortbread.
Make extra they won't last long!
Ingredients
- 1/2 cup of butter - unsalted (you must use real butter)
- 3 Tblsp. confectioner sugar
- 1 1/2 cups all purpose flour
- 1/2 tsp. vanilla
- 1/4 tsp salt
- 1/2 cup of pecans chopped fine
Instructions
- Cream butter and sugar until smooth, add vanilla & salt and mix to blend. Then add flour gradually to make soft dough.
- Incorporate finely chopped pecan and cover. Refrigerate approximately 2 hrs until stiff and you are able to form into 1" size balls.
- Place pecan sandie balls on ungreased baking sheet and bake 325 degrees for approximately 10 - 15 minutes. Bottoms should be light brown and cookie top set. Watch them closely and adjust bake time to your oven.
- Remove from oven and let cool slightly. Then roll in powdered sugar. If your cookie is too hot the powdered sugar will melt so let them cool a little bit. You want them to have a nice coating of powdered sugar that will stick and absolutely melt in your mouth.

A Little Advice
If You Really Like Pecans Don't Be Tempted To Add More To The Recipe. There Is No Liquid Added Nor Is There Eggs. So You Need The Butter And Flour Rashio To Bind Your Cookies Together And Adding More Nuts Will Make Them Less Able To Do That.
A Low In Sugar Cookie!
Aside from the 3 Tablespoons of powdered sugar you add to this recipe and the light coating that they are rolled in these cookies have very little sugar in them which makes them one of my favorites.
