Homemade Vegetable Soup With A Cabbage Base

I Love Soup And I Love This Homemade Vegetable Soup.

Vegetable soup starts with a garden somewhere!

I've made this soup many times through the years. This recipe makes a large pot of healthy vegetable soup. I use cabbage as the base to it because it makes a healthy and hearty soup. I think if you added meat to it then it would almost become a stew at that point.

So I keep it a simple but hearty vegetable soup. It's unforgiving and actually easy and quick to make. You can make variations buy changing your vegetables and also your seasonings. So experiment and have fun with this recipe because I know if you have a garden then you have lots of wonderful vegetables to work with!

The Meal

I like to add home baked bread to my homemade soup meals. If you have a bread maker tucked away in your cabinets now is the time to get it out and use it. They really aren't that hard to use and the variations are wonderful to compliment your vegetable soup.

Also slice some cheese of your choice and a fruit and your meal is complete!

If You Plant A Garden You'll Need Seeds - Depending on your planting season you might get two gardens!

If you live in the north your growing season is spring through fall. In the South you have the opportunity to have two gardens through the year. Some vegetables are heat sensitive and grow better during the winter months. So be sure to read your seed packets for the recommended growing times in your "Hardiness Zones".

Remember:

Fresh produce whether from the grocery or farmers market is healthier, in my opinion, but you also want to rinse your fresh produce well before you start slicing, dicing and cooking!

Cook Time

Total Time: approx. 1 1/2 hrs.

Serves: Many

Ingredients

  • 1 medium head of cabbage
  • rough chopped into 1 inch pieces. (remove core unless you like it)
  • 3 -4 fresh carrots
  • peel or scrapped and cut into slices
  • 1 medium onion
  • medium chopped
  • 3 -4 cloves of fresh garlic
  • chopped
  • enough water to cover your cabbage
  • 1 can of beef bullion or 3 cubes
  • optional if vegan
  • 2 cans of stewed tomatoes or any choice you prefer or 3 fresh peeled and chopped.
  • 1 bag of frozen mixed vegetables to your taste
  • like peas & lima beans ect. I use the veg mixed or sometimes add all fresh veggies
  • If using fresh add a couple chopped potatoes ect.
  • 1/4 cup of barley or to taste (optional)
  • salt & pepper to taste
  • or any other seasonings you like
  • a sprinkle of herbs such as rosemary
  • thyme
  • oregano & basil ... all to taste and all optional

Instructions

  1. In a large pot pour about a 1/4 cup of olive oil in and add cabbage, cook until cabbage starts to look translucent then add carrots and onion. Saute them approx 20 min or until they start soften and are just a little browned, add garlic, stir occasionally so that they do not burn. Once your cabbage, onion and carrots have a little browning on them add your tomatoes and water to cover. Add your bullion or broth and stir. (If you do not like tomatoes use tomatoe juice or vegetable juice the flavor is still there).
  2. I simmer all of those ingredients together for about 30 minutes then I add the bag of frozen mixed veggies. I prefer the kind with a nice mix of lima beans, peas, corn, potatoes. You can add any kind of vegetable that will cook quickly at this point that you like, fresh or frozen. It's up to you.
  3. This is a hearty vegetable soup that tastes great! Add a crusty bread and some cheese and you have a whole meal that is homemade, healthy with "leftovers"!
